3 T olive oil
4 tomatoes, cut into wedges
5 carrots, diced
1 onion, diced
2 C green beans
2 C sliced mushrooms
8 leaves of cabbage, cut into quarters
8 C chicken broth
2 C dried rotini noodles (optional)
Mrs. Dash seasoning mix, to taste
Lawry’s seasoning salt, to taste
freshly ground pepper
In a large stockpot, saute the tomato wedges in olive oil until soft, with wrinkled skin. Add the broth, and any vegetables that take longer to cook. In this case, the carrots, onions and green beans. Bring to a boil. Reduce heat and bring soup to a simmer, then add the soft and leafy vegetables, such as mushrooms and cabbage. If you are using noodles, add these to the pot as well. Let simmer for 30-40 minutes, then season liberally to taste. Serve at will.
This soup also taste great cold.
