Salmon with Red Curry Sauce

1 lb salmon filet, cubed
vegetable oil
3 T red curry paste
1 can coconut cream
1 can green peas
1 T dried shrimp
1 t sugar
1 T fish sauce
lime juice
kaffir lime leaves
sweet basil

Crush dried shrimp using a mortar and pestle. Heat oil in a pan until hot. Add red curry paste and fry until fragrant, about 2 to 3 minutes. Add coconut cream and bring mixture to a boil, stirring constantly. Add dried shrimp, sugar and lime juice. add fish sauce and remove from heat. Add salmon, peas, basil and lime leaves.
