Rib Rub

3 T salt
3 T brown sugar
1 T minced onions
1 T paprika
1 T chili powder
1 T garlic powder
1 T cinnamon

Mix all ingredients together in a small bowl. Makes about 3 oz., or enough for liberally seasoning about 3 full racks.

Chef Jeff Kmet uses this rub on his pork back ribs, quite possibly the most tender meat we’ve ever tasted.
