Peach Mango Salsa

2 large tomatoes, pureed
1-2 C chopped tomatoes
¾ C peeled peache, diced
½ C red onion
½ C sweet yellow (or red) bell pepper
½ C peeled mango, diced
2 jalapeno peppers, diced
3 green onions, chopped
garlic to taste
1 ½ t lime juice
½ t cilantro
cumin, salt and pepper to taste
garlic scapes

Puree garlic scapes, garlic, and tomatoes. Add salt and pepper to taste. Add chopped vegetables and fruit, season with lime juice and serve.

This salsa took second place at a North Carolina Farmer’s Market salsa competition in 2010. Recipe provided by Avani Doshi.
