Mushroom and Celery Salad

5 C sliced mushrooms
4 stalks celery, sliced
1 oz. shredded parmesan
1 t black truffle oil
1/2 t grated lemon rind
2 T lemon juice (about half a lemon)
1/4 t each salt and pepper

Combine truffle oil, lemon rind, lemon juice, salt and pepper in a small bowl. In a separate salad bowl, combine mushrooms and celery. Add dressing and toss. Top with parmesan and serve immediately.
