vegetable oil for frying
2 C yellow cornmeal
1 1/3 C flour
1/3 C seasoned salt
2 T baking powder
1 T freshly ground black pepper
4 boneless, skinless catfish filets
Heat oil in a deep fryer to 350° F. Combine all dry ingredients in a bowl: cornmeal, flour, seasoned salt, baking powder and pepper. Pat catfish down with a paper towel to remove excess moisture, then coat in cornmeal mixture.
Fry catfish until golden brown and cooked through, about four or five minutes.
