2 zucchini, each cut into 16 wedges
3 large egg whites
1/2 t salt
Preheat oven to 500° F. In a large bowl, beat egg whites until stiff and frothy. Add the zucchini wedges and toss to coat. Let sit for 5 minutes.
Arrange zucchini, cut side down, on a baking sheet covered in foil and sprayed with cooking spray. Bake the wedges for about 15 minutes. Let stand for about a minute before serving.
